2-1/2 cups flour (can use half whole wheat)
2 cups sugar
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
4 eggs
1 can pumpkin (We used 2 cups)
1 cup melted butter
12 oz chocolate chips (2 cups)
Preheat over to 350. Mix dry ingredients together. Beat eggs in large bowl. Mix in melted butter and pumpkin. Add dry ingredients and mix well. Stir in chocolate chips. Spoon into muffin pan, bake 20-25 minutes.
Makes about 24 muffins.
I'll have to try these. We make pumpkin chip cookies and we LOVE them.
